Experiments With Food

Today Justin and I woke up pretty late – around 11am.  This caused us to have a pretty late lunch – almost 2pm.  So when it finally got to six o’clock tonight, I finally decided to start dinner.  Determined to try to cook more myself, I had a goal for what we’d have.

Our dinner tonight consisted of leftover celery, leftover ma po tofu, leftover spicy chicken, baked cauliflower, shredded chicken tenderloin, seafood assortment and twice-cooked pork.  In the end we didn’t have the cauliflower but only because we forgot about it and it was left in the NuWave oven.  Oops!  While I got everything started for dinner, I was determined to make my favorite dish by myself or at least mostly by myself.   When Justin and I first met we would cook, but not really all that much.  In the past 6-12 months we have been cooking more and more and trying out new dishes.  It will typically take about an hour or so to cook dinner but it will last a few nights for leftovers.

So, I was determined to cook my favorite dish, twice-cooked pork, by myself.  It’s really not that difficult to do.  Take the fattiest pork you can find – has to be thick-cut – and boil it in a saucepan for 20 minutes.  Once done, take it out of the water and let it sit for a few minutes to cool down.  Next, cut it into thin slices.  These slices will then be placed into a frying pan of hot oil.  Add a packet of twice-cooked-pork seasoning along with peppers (we used a jalapeño pepper) and some chopped green onion.  Cook it until it looks good, then serve!
